    Hot Cocoa Cookies

    There's nothing quite like the comfort of sipping on a cup of hot cocoa during the chilly winter months. Just picture yourself sitting by the fireplace with hot cocoa in one hand, and hot cocoa cookies in the other. A bit much? Maybe you can indulge in the cookies with a glass of milk instead! These hot cocoa cookies combine rich flavors of chocolate, the gooeyness of Nutella, and the soft and pillowy marshmallows which provide the perfect crunch. Let’s make them together!

    Equipment

    • Baking Sheet
    • Parchment Paper
    • 2-inch cookie scoop
    • Standard Mixer
    • + other things you already have on hand

    Ingredients

    • Butter
    • Brown sugar
    • Hot cocoa powder
    • Egg
    • Vanilla extract
    • Baking soda
    • Cornstarch
    • Cocoa powder
    • All-purpose flour
    • Nutella
    • Mini marshmallows

    Instructions

    STEP 1: Preheat the Oven

    Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.

    STEP 2: Freeze Nutella Scoops

    Scoop eight 1 to 2 teaspoon-sized Nutella portions onto the parchment paper. Place them in the freezer while you prepare the cookie dough.

    STEP 3: Prepare the Cookie Dough

    In a standard mixer, combine softened butter, brown sugar, hot cocoa powder, egg, vanilla extract, baking soda, cornstarch, and cocoa. Mix until well combined.

    STEP 4: Add Flour

    Add the all-purpose flour to the mixture, continuously scraping down the sides of the bowl. Mix until the dough is thoroughly incorporated.

    STEP 5: Assemble the Cookies

    Using a two-inch cookie scoop, portion out the dough. Create a small well in the center of each dough ball and place a frozen Nutella portion inside. Roll the dough around the Nutella, ensuring no Nutella is exposed. Repeat for all cookies.

    STEP 6: Flatten and Add Marshmallows

    Slightly flatten each cookie on the prepared baking sheet. Place 3 to 6 mini marshmallows on top of each cookie.

    STEP 7: Bake to Perfection

    Bake the cookies for 10 to 12 minutes or until the marshmallows turn lightly golden.

    STEP 8: Enjoy the Sweet Rewards

    Once out of the oven, let the cookies cool for a few minutes. Grab your favorite glass of milk, take a bite, and savor the blissful combination of warm chocolate, gooey Nutella, and fluffy marshmallows.

    Variations & Substitutions

    If you don't want to stuff these cookies with Nutella, you can skip that step. But, if you do, I'd recommend adding in chocolate chips to the dough.

    Ingredients
      

    • 1 stick butter softened
    • ¼ cup brown sugar
    • ¼ cup hot cocoa powder
    • 1 egg
    • 1 ½ teaspoons vanilla extract
    • 1 teaspoon baking soda
    • ¼ teaspoon cornstarch
    • 2 tablespoons cocoa
    • 1 ¼ cup all-purpose flour
    • Nutella about ⅓ cup
    • 1 cup mini marshmallows

    Instructions
     

    • Preheat the oven to 350 degrees F.
    • Line a baking sheet with parchment paper and scoop eight 1 to 2 teaspoon sized Nutella spoonfuls onto the parchment paper. Place in the freezer while you prepare the dough.
    • In a standard mixer, combine the butter, brown sugar, hot cocoa powder, egg, vanilla, baking soda, cornstarch and cocoa. Mix together until combined.
    • Add the all-purpose flour and combine, while also continually scraping down the sides of the bowl.
    • Once well incorporated, scoop out the cookie dough with a two-inch cookie scoop. Poke a divet in the center of the dough ball and place a frozen glob of Nutella and roll dough around Nutella so no Nutella is showing.
    • Repeat with all the cookies. Slightly flatten each cookie on the cookie sheet.
    • Place 3 to 6 mini marshmallows on each individual cookie. I typically start with 3 and then add more if I’m feeling like it!
    • Bake for 10 to 12 minutes or until the marshmallow is lightly golden. Enjoy with your favorite glass of milk!

      how many gram is 1 stick butter?
