    Chocolate Rolo Cookies

    There's something magical about the combination of chocolate and caramel. When these two heavenly flavors come together in a chewy, gooey cookie, you know you're in for a treat. Get ready to satisfy your sweet tooth with our delicious Chocolate Rolo Cookies. These delectable treats are easy to make and even easier to devour.

    Equipment

    No fancy kitchen gadgets are necessary for this recipe. Only regular kitchen supplies are needed.

    Ingredients

    • Butter
    • Brown sugar
    • Granulated sugar
    • Egg
    • Vanilla extract
    • All-purpose flour
    • Cocoa powder
    • Baking soda
    • Salt
    • Semi-sweet chocolate chips
    • Rolos

    Instructions

    1. Preheat and Prepare

    Preheat your oven to 350 degrees F (175 degrees C) and line a baking sheet with parchment paper. This will ensure that your cookies don't stick and make for an easy cleanup.

    2. Cream and Mix

    In a large bowl, or the bowl of a standard mixer, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy. Add the egg and vanilla extract, mixing until well combined.

    3. Combine Dry Ingredients

    In a separate medium-sized bowl, whisk together the dry ingredients: flour, cocoa powder, baking soda, and salt. Once well combined, pour the dry mixture into the butter mixture and stir until everything comes together. Don't forget to add in those tempting semi-sweet chocolate chips.

    4. Scoop and Stuff

    Using a 1-inch cookie scoop, scoop out a ball of dough. Now comes the exciting part – push one Rolo into the center of each dough ball and mold the dough around it. Ensure the Rolo is completely enveloped by the cookie dough. Place the dough balls on the prepared baking sheet, and if you're feeling extra indulgent, top them with a few more chocolate chips.

    5. Bake to Perfection

    Bake the cookies in the preheated oven for 10 to 12 minutes. The goal is to have cookies that are set but still soft. Keep a watchful eye on them to prevent over-baking. And, once done, let the cookies cool on the baking sheet for 5 minutes. This short waiting period builds anticipation and allows the cookies to firm up slightly before transferring them to a cooling rack.

    Variations & Substitutions

    If you don't have Rolos on hand and you want to make these right now, you can use soft caramels if you have those instead.

    Ingredients
      

    • ½ cup butter softened
    • ½ cup brown sugar
    • ⅓ cup granulated sugar
    • 1 egg
    • 1 ½ teaspoons vanilla extract
    • 1 cup flour
    • ½ cup cocoa powder
    • ½ teaspoon baking soda
    • ¼ teaspoon salt
    • 1 cup semi-sweet chocolate chips
    • 12 soft Rolos or soft caramels

    Instructions
     

    • Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
    • In a large bowl, or the bowl of a standard mixer, cream together the butter and sugars. Add the egg and vanilla and mix until combined.
    • In a separate, medium-sized bowl, mix the dry ingredients together: flour, cocoa powder, baking soda, and salt. Whisk until combined and pour into the butter mixture and stir together. Stir in the chocolate chips.
    • Use a 1-inch cookie scoop to scoop out one ball of dough. Push one Rolo into the center of each dough ball and mold together so that it’s on the inside of the cookie dough ball. Place on a cookie sheet. Top with more chocolate chips if desired.
    • Bake for 10 to 12 minutes. Let the cookies cool for 5 minutes before serving. Enjoy while they’re hot!

      So dang good 🤤
      VERY rich—make sure you have milk handy!
      I used a 1 in cookie scoop and ended up with 20 cookies instead of 12. Maybe I did small scoops or something but they were amazing anyways.
