    S’mores Bars take me back to the delicious flavors of my childhood sitting by the cozy campfire on a perfect summer night. My parents spoiled us with fun camping trips in our cute tent trailer where we made so many memories. Mom and dad, thanks for making my childhood unforgettable! I loved making s’mores over the fire (and all the delicious dutch oven desserts too!), and that’s why I wanted to make these delicious s’mores bars.

    These bars capture all the goodness of classic s'mores in a convenient, shareable treat that's perfect for any occasion. The combination of graham cracker crumbs, melted chocolate, and toasted marshmallows, all nestled in a buttery cookie dough, makes for a dessert that's as comforting as it is delicious. And with just 40 minutes from start to finish, you can whip these up anytime a craving strikes!

    Ingredients for S'mores Bars:

    • 1 stick butter, softened (½ cup)
    • ½ cup granulated sugar
    • ¼ cup brown sugar
    • 1 egg
    • 1 teaspoon vanilla
    • 1 ½ cups flour
    • ¼ teaspoon salt, or sea salt
    • ½ teaspoon baking soda
    • 1 cup semi-sweet chocolate chips, divided
    • ½ cup graham cracker crumbs (about 3 graham crackers)
    • 1 cup mini marshmallows
    • Sea salt flakes for on top (optional)

    Instructions for S'mores Bars:

    1. Prepare the Cookie Dough Base:
      • Line a 9x9 baking dish with parchment paper and set aside.
      • Preheat the oven to 350°F (175°C).
      • In a standard mixer, beat together the softened butter and sugars until creamy.
      • Add the egg and vanilla extract, continuing to mix at high speed for 5 minutes until light and fluffy.
      • In a small bowl, combine the flour, salt, and baking soda. Gradually add to the wet ingredients, mixing until just combined.
      • Fold in ½ cup of the chocolate chips.
    2. Assemble the Bars:
      • Press half of the cookie dough into the prepared 9x9 pan.
      • Evenly sprinkle the remaining ½ cup of chocolate chips over the dough.
      • Top with the mini marshmallows, spreading them out evenly.
      • Use your hands to squeeze and spread the remaining cookie dough over the marshmallows and chocolate chips, forming a thin top layer.
    3. Bake:
      • Bake for 25-30 minutes, or until the cookie dough is set and lightly golden.
      • Remove from the oven and, if desired, sprinkle with sea salt flakes for an extra burst of flavor.
    4. Cool & Serve:
      • Allow the bars to cool completely in the pan before cutting into squares.
      • Serve and enjoy the perfect combination of gooey marshmallow, melted chocolate, and crisp cookie.
