    There’s nothing better than a warm, comforting meal that practically cooks itself. This Slow Cooker Chicken & Potatoes is exactly that—a creamy, flavorful dish with tender chicken, buttery potatoes, and a rich garlic Parmesan sauce. Serve it over rice with a side of broccoli, and you have a complete meal that’s perfect for busy weeknights. Plus, the leftovers? Just as good (if not better) the next day!

    Ingredients for Slow Cooker Chicken & Potatoes:

    Servings: 6

    • 1 pound red baby potatoes (halved if large)
    • Salt and pepper, to taste
    • 1 teaspoon Italian seasoning
    • 4 boneless, skinless chicken breasts
    • ½ teaspoon paprika
    • 1 cup heavy cream
    • 1 cup chicken broth
    • ½ cup grated Parmesan cheese
    • 4 garlic cloves, minced
    • 2 tablespoons butter, cut into small pieces
    • 12-ounce bag frozen broccoli
    • 2 cups cooked rice

    Instructions for Slow Cooker Chicken & Potatoes:

    1. Layer the Base: Place the potatoes in the bottom of the Crock Pot. Season with salt, pepper, and a sprinkle of Italian seasoning.
    2. Add the Chicken: Lay the chicken breasts on top of the potatoes. Season with paprika, salt, and pepper.
    3. Make the Sauce: In a small bowl, whisk together the heavy cream, chicken broth, Parmesan cheese, minced garlic, and remaining Italian seasoning. Pour the mixture over the chicken and potatoes.
    4. Add Butter & Cook: Dot the butter pieces on top for extra richness. Cover and cook on low for 6 hours or high for 3 to 4 hours until the chicken is tender and cooked through, and the potatoes are easily pierced with a fork.
    5. Prepare the Broccoli: In the last 10 minutes, cook the broccoli in the microwave according to package directions. Once ready, add it to the slow cooker and stir gently.
    6. Serve & Enjoy: Spoon the chicken, potatoes, and sauce over a bed of cooked rice. Garnish with extra Parmesan if desired. Enjoy!

    • 1 Slow Cooker (crock pot)

    Ingredients

    • 1 cup heavy cream
    • 1 cup chicken broth

    • 12 ounce bag frozen broccoli
    • 2 cups rice cooked

    Instructions
     

    • Place the potatoes in the bottom of the Crock Pot. Season with salt, pepper, and a sprinkle of Italian seasoning.
    • Lay the chicken breasts on top of the potatoes. Season with paprika, salt, and pepper.
    • In a small bowl, whisk together the heavy cream, chicken broth, Parmesan cheese, minced garlic, and remaining Italian seasoning. Pour the mixture over the chicken and potatoes.
    • Dot the butter pieces on top for extra richness.
    • Cook on low setting for 6 hours, or on a high setting for 3 to 4 hours. You’ll know it’s ready when the chicken is tender and cooked through, and the potatoes can be pierced easily with a fork.
    • In the last 10 minutes, cook the broccoli in the microwave according to package directions. Once ready, add to the crock pot mixture.
    • Lay a bed of rice in a bowl, and spoon the chicken, potatoes, broccoli and sauce on top. Garnish with extra Parmesan if desired. Enjoy!

    Notes

    This meal was delicious as leftovers too! We like saving enough to take to work for lunch the next day!
