    This Peanut Butter Chicken is a high-protein dinner that is packed with flavor and easy enough to make on a busy weeknight!

    If you love the combination of savory, sweet, and a little bit of spice, you are going to love this simple dinner. Tender chicken pieces are coated in a creamy peanut butter sauce made with simple ingredients like peanut butter, honey, coconut aminos, garlic, and a little crushed red pepper for the perfect kick.

    This recipe has become a regular in our house because it is one of those meals that tastes like takeout but is made with ingredients you probably already have at home. I love serving it over rice with broccoli for a balanced meal that is filling, protein-packed, and great for meal prep.

    The best part? This recipe makes enough for dinner plus leftovers. I make this for my husband and me, and we usually have extra portions ready for lunches the next day!

    Ingredients for PB Chicken

    For the Chicken

    • 3 chicken breasts (about 1.5 lbs), cut into small cubes
    • 1 teaspoon salt
    • 1 teaspoon pepper
    • 1 ½ teaspoons onion powder
    • 1 ½ teaspoons garlic powder
    • ½ teaspoon ground ginger (optional)

    For the PB Sauce

    • ½ cup peanut butter
    • ¼ cup coconut aminos
    • ¼ cup honey
    • 2 tablespoons rice vinegar
    • ½ cup chicken broth
    • 2 teaspoons minced garlic
    • 1 to 1 ½ teaspoons crushed red pepper (optional, for spice)

    Instructions for Peanut Butter Chicken

    1. Cut the chicken breasts into small cubes.
    2. Heat oil in a large pan over medium-high heat.
    3. Add the chopped chicken to the pan and season with salt, pepper, onion powder, garlic powder, and ginger.
    4. Cook the chicken until fully cooked through, stirring occasionally.
    5. While the chicken is cooking, make the peanut butter sauce by combining the peanut butter, coconut aminos, honey, rice vinegar, chicken broth, minced garlic, and crushed red pepper in a bowl. Stir until combined.
    6. Pour the peanut butter sauce over the cooked chicken and stir until the chicken is fully coated.
    7. The sauce will look thin at first, but let the chicken simmer for about 6 to 8 minutes until the sauce thickens and coats the chicken.
    8. While the sauce is simmering, cook your frozen broccoli according to the package directions.
    9. Add the cooked broccoli directly into the pan with the peanut butter chicken and stir everything together.
    10. Serve over your favorite rice and enjoy!

    Recipe Tips

    • If you like a little heat, add the full 1 ½ teaspoons of crushed red pepper. If you prefer a milder flavor, start with less and adjust to your taste.
    • The sauce thickens as it simmers, so don’t worry if it seems too thin when you first add it to the pan.
    • This recipe is perfect for meal prep because the flavors get even better the next day!

    Ingredients
      

    For the Chicken:

    • 3 chicken breasts 1.5 lbs
    • 1 teaspoon salt
    • 1 teaspoon pepper
    • 1.5 teaspoons onion powder
    • 1.5 teaspoons garlic powder
    • ½ teaspoon ground ginger optional

    For the Peanut Butter Sauce:

    • ½ cup peanut butter
    • ¼ cup coconut aminos
    • ¼ cup honey
    • 2 Tablespoons rice vinegar
    • ½ cup chicken broth
    • 2 teaspoons minced garlic
    • 1 - 1 ½ teaspoons crushed red peppers optional

    Instructions
     

    • Cut the chicken into small cubes.
    • Heat up the oil in a pan over medium-high heat.
    • Add in the chopped chicken and season with all the seasonings in the “chicken” section.
    • Cook until fully cooked through. Stir occasionally.
    • While the chicken is cooking, mix all the ingredients in the “peanut butter sauce” section into a medium bowl.
    • Pour the sauce into the pan with the chicken and stir until the chicken is coated.
    • The sauce will be runny at first. Let it simmer until it thickens (about 6-8 minutes).
    • While sauce simmers, microwave your frozen broccoli according to package directions.
    • Once broccoli is cooked, add directly to simmering chicken and sauce mixture and stir.
    • Cook your favorite rice and add the rice to a bowl and top with your finished peanut butter chicken and broccoli!
    • Enjoy!
