- 4 ounces semi-sweet chocolate chopped finely
- 1 large egg
- 1 large egg yolk
- ½ cup powdered sugar + more for dusting
- Pinch of salt
- 3 tablespoons all-purpose flour
Instructions
- Preheat the oven to 450 degrees F. Use butter or shortening and lather it inside of two ramekins. Then lightly coat with flour to ensure the batter won’t stick to the ramekins when finished cooking. Place the buttered and floured ramekins on a baking sheet.
- Melt butter and chopped chocolate in the microwave in 30-second increments (while stirring in between) until smooth.
- In a medium mixing bowl, combine the egg and egg yolk, powdered sugar, and salt. Beat with a hand mixer for a couple of minutes, or until the color starts to turn a pale yellow.
- Add the flour and chocolate mixture to the egg mixture and fold together until a chocolate batter forms together smoothly.
- Divide the batter evenly among the two ramekins. Bake for 10 minutes, or until the sides of the cakes are firmly set, but it still jiggles in the center.
- Let the cakes cool in the ramekins for 2 minutes.
- Place a small plate over the top of each ramekin, and carefully turn it over and remove the ramekin. You should have two beautiful lava cakes.
