Chicken Gnocchi Soup (Olive Garden Copycat)
Ingredients
- 4 tablespoons butter
- 1 tablespoon extra virgin olive oil
- 1 teaspoon minced garlic
- ½ onion finely diced
- 2 celery sticks finely diced
- ⅓ cup all-purpose flour
- 3 cups half and half add more for more liquid, sometimes I add 1 quart to feed more
- 28 ounces chicken broth use full 32 ounce box if you want more liquid
- ½ teaspoon garlic salt
- ¼ teaspoon dill weed
- ¼ teaspoon parsley flakes
- 1 cup shredded carrots
- ½ cup chopped spinach leaves
- 2 chicken breasts diced and cooked
- 16 ounce package potato gnocchi
Instructions
- In a large pot, melt the butter, olive oil and minced garlic.
- Once melted, add the onion and celery until limp.
- Add the flour until it creates a roux and cook for roughly 2 minutes.
- Slowly add the half and half and chicken broth (alternating between the two). Continue stirring until it thickens.
- Add the garlic salt, dill weed, and parsley flakes and stir until well blended.
- Add the carrots, spinach, chicken and gnocchi. Simmer for about 5 minutes or until the gnocchi is fully cooked and the soup is thickened (if too thick, add more chicken broth ¼ cup at a time).
