Ingredients
  

  • 4 tablespoons butter
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon minced garlic
  • ½ onion finely diced
  • 2 celery sticks finely diced
  • cup all-purpose flour
  • 3 cups half and half add more for more liquid, sometimes I add 1 quart to feed more
  • 28 ounces chicken broth use full 32 ounce box if you want more liquid
  • ½ teaspoon garlic salt
  • ¼ teaspoon dill weed
  • ¼ teaspoon parsley flakes
  • 1 cup shredded carrots
  • ½ cup chopped spinach leaves
  • 2 chicken breasts diced and cooked
  • 16 ounce package potato gnocchi

Instructions
 

  • In a large pot, melt the butter, olive oil and minced garlic.
  • Once melted, add the onion and celery until limp.
  • Add the flour until it creates a roux and cook for roughly 2 minutes.
  • Slowly add the half and half and chicken broth (alternating between the two). Continue stirring until it thickens.
  • Add the garlic salt, dill weed, and parsley flakes and stir until well blended.
  • Add the carrots, spinach, chicken and gnocchi. Simmer for about 5 minutes or until the gnocchi is fully cooked and the soup is thickened (if too thick, add more chicken broth ¼ cup at a time).
  • Add salt and pepper to taste and serve immediately while warm. Enjoy!
