Well, you are in for a treat with this easy and delicious recipe that is perfect for serving you and your special someone (or just have two for yourself I don't care!). This chocolate lava cake combines the rich flavors of chocolate and fudge. Once you break into this cake, you'll be hooked for days!

    Equipment for Chocolate Lava Cake

    • Electric Hand Mixer (I own this Kitchen Aid one and I LOVE it)
    • Ramekins

    Ingredients for Chocolate Lava Cake

    • Butter
    • Semi-sweet chocolate
    • Egg
    • Egg yolk
    • Powdered sugar
    • Salt
    • All-purpose flour

    How to Make Chocolate Lava Cake

    • Preparation: Preheat your oven to 450 degrees F. Grease two ramekins with butter or shortening and coat them lightly with flour to prevent sticking. Place the prepared ramekins on a baking sheet.
    • Chocolate Bliss: In a microwave-safe bowl, melt the butter and chopped chocolate in 30-second increments, stirring between each interval until smooth and velvety.
    • Egg-cellent Batter: In a medium mixing bowl, combine the egg, egg yolk, powdered sugar, and a pinch of salt. Beat the mixture with a hand mixer for a couple of minutes until it turns a pale yellow color.
    • The Perfect Blend: Add the flour to the egg mixture, followed by the melted chocolate. Gently fold the ingredients together until a smooth and luscious chocolate batter forms.
    • Into the Oven: Divide the batter evenly between the two ramekins. Bake for 10 minutes or until the sides of the cakes are set but the center still jiggles slightly – the hallmark of a gooey lava cake.
    • Cooling Time: Allow the cakes to cool in the ramekins for 2 minutes. This short waiting period builds anticipation and lets the flavors meld together.
    • Unveiling the Goodness: Place a small plate over the top of each ramekin and carefully flip it over to release the lava cake. Watch in awe as the molten chocolate center oozes out onto the plate.

    What if I Don't Have Ramekins?

    You can still make Chocolate Lava Cake without ramekins. You can use muffin tins, although it will cook a lot faster since it's not as wide or thick.

    Equipment

    • 2 Ramekins
    • 1 Electric Hand Mixer

    Ingredients
      

    • ½ stick unsalted butter 4 tablespoons
    • 4 ounces semi-sweet chocolate chopped finely
    • 1 large egg
    • 1 large egg yolk
    • ½ cup powdered sugar + more for dusting
    • Pinch of salt
    • 3 tablespoons all-purpose flour

    Instructions
     

    • Preheat the oven to 450 degrees F. Use butter or shortening and lather it inside of two ramekins. Then lightly coat with flour to ensure the batter won’t stick to the ramekins when finished cooking. Place the buttered and floured ramekins on a baking sheet.
    • Melt butter and chopped chocolate in the microwave in 30-second increments (while stirring in between) until smooth.
    • In a medium mixing bowl, combine the egg and egg yolk, powdered sugar, and salt. Beat with a hand mixer for a couple of minutes, or until the color starts to turn a pale yellow.
    • Add the flour and chocolate mixture to the egg mixture and fold together until a chocolate batter forms together smoothly.
    • Divide the batter evenly among the two ramekins. Bake for 10 minutes, or until the sides of the cakes are firmly set, but it still jiggles in the center.
    • Let the cakes cool in the ramekins for 2 minutes.
    • Place a small plate over the top of each ramekin, and carefully turn it over and remove the ramekin. You should have two beautiful lava cakes.
    • Dust with powdered sugar and serve immediately. You can serve it with ice cream, whipped cream, or even plain is just as delicious! Enjoy!
