    Red Velvet Cookies

    If you’re a fan of red velvet, you cannot pass up making these incredible Red Velvet Cookies. These cookies are easily made from a cake mix, making it so simple for you to indulge in the sweet red goodness filled with white chocolate chips to enhance the flavor.

    Red velvet cookies make me think of some of my college years. One of my roommates would make absolutely delicious red velvet cookies with a cake mix. I was determined to create my own recipe with a cake mix too. This recipe is so easy to whip up and serve to your college roomies, family, or friends. Try this recipe today, your family will thank you!

    Equipment

    I made this recipe using regular household kitchen items. I would highly recommend using a standard mixer for this recipe instead of a hand mixer. Unless your hand mixer is fantastic you can use it, but this dough gets very thick!

    Ingredients

    • 1 (15.25 ounce) red velvet cake mix 
    • Cream cheese
    • Vegetable oil
    • Egg
    • Vanilla extract
    • Chocolate chips

    Instructions

    STEP 1: Preheat & Prep

    Your first step is to simply preheat the oven to 350 degrees F. Grab your favorite baking sheet and line it with parchment paper so the cookies don’t stick to the pan. Set it aside to use later when your cookie dough is ready.

    STEP 2: Oil & Cream Cheese Mixture

    Next, you’re going to beat the cream cheese and vegetable oil together until it comes together nicely. Make sure the cream cheese is softened for best results.

    STEP 3: Form the Dough Together

    To make the delicious red velvet cookie dough, you’re going to add the egg and vanilla to the cream cheese mixture. Blend together, and then pour in the red velvet cake mix. The cookie dough will start looking extra red at this point, so now it’s your sign to add a pop of white color by incorporating the chocolate chips into the cookie dough. Fold them in.

    STEP 4: Refrigerate & Bake

    Now you’re going to refrigerate the dough for about 20 minutes so the dough can come together and soak up all the flavor. Once the dough has chilled for 20 minutes, remove it and form together cookie dough balls. Place on the prepared pan and bake in the oven for 10 minutes. 

    Once done, remove from the oven and let cool on the plan before transferring them to a cooling rack. Enjoy while hot and delicious!

    Ingredients
      

    • 1 15.25 ounce red velvet cake mix
    • 8 ounces cream cheese softened
    • ½ cup vegetable oil
    • 1 egg
    • ½ teaspoon vanilla extract
    • 1 cup white chocolate chips

    Instructions
     

    • Preheat the oven to 350 degrees F and place parchment paper on a cookie sheet and set aside.
    • In a medium bowl, using a standard mixer, combine the oil and cream cheese.
    • Add the egg and vanilla extract until combined. Add in the cake mix and blend for about two minutes. Fold in the chocolate chips and then refrigerate the batter for 20 minutes.
    • Using a 1-inch cookie scoop, scoop dough out and roll into balls and place on the parchment paper lined cookie sheet.
    • Bake in the oven for 10 minutes and allow the cookies to cool before eating. Enjoy!
