If you’re a fan of red velvet, you cannot pass up making these incredible Red Velvet Cookies. These cookies are easily made from a cake mix, making it so simple for you to indulge in the sweet red goodness filled with white chocolate chips to enhance the flavor.

- 1 15.25 ounce red velvet cake mix
- 8 ounces cream cheese softened
- ½ cup vegetable oil
- 1 egg
- ½ teaspoon vanilla extract
- 1 cup white chocolate chips
Preheat the oven to 350 degrees F and place parchment paper on a cookie sheet and set aside.
In a medium bowl, using a standard mixer, combine the oil and cream cheese.
Add the egg and vanilla extract until combined. Add in the cake mix and blend for about two minutes. Fold in the chocolate chips and then refrigerate the batter for 20 minutes.
Using a 1-inch cookie scoop, scoop dough out and roll into balls and place on the parchment paper lined cookie sheet.
Bake in the oven for 10 minutes and allow the cookies to cool before eating. Enjoy!
