    Crepes

    Alright, let's talk about crepes – those thin, lacy, and fabulous French pancakes that manage to capture the essence of culinary perfection. Whether you're a seasoned foodie or just someone with a soft spot for deliciousness, these crepes will not disappoint! I love this recipe because it reminds me so much of my childhood. My mom was a fantastic baker, and I found my love of baking because of her. Thanks mom, I love you! So let's dive in and make these delicious, mouth-watering crepes together!

    Equipment

    I made this recipe with typical kitchen items and tools. No fancy crepe maker or anything, easy to accommodate you in the kitchen!

    Ingredients

    • Milk
    • Eggs
    • Olive oil
    • Granulated sugar
    • Salt
    • All-purpose flour
    • Oil or butter for greasing the pan

    Instructions

    Prepare the Batter:

    In a large bowl, combine the eggs, olive oil, sugar, salt, and milk. Whisk until the ingredients are well incorporated.

    Sift in the Flour:

    Gradually add the sifted flour to the wet ingredients, whisking continuously to ensure a smooth batter without lumps.

    Grease and Heat the Pan:

    Grease a large fry pan or skillet with butter or oil over medium heat. Make sure the pan is evenly coated.

    Pour and Swirl:

    Pour a ladleful of crepe batter into the center of the pan. Quickly lift the pan off the heat and tilt it in a circular motion to spread the batter thinly across the surface.

    Cook and Flip:

    Allow the crepe to cook on one side for a couple of minutes until the edges start to lightly brown. Be mindful not to overcook; the goal is a tender, not crunchy, crepe. Carefully flip the crepe to the other side using a spatula and cook for an additional minute or two.

    Stack with Parchment Paper:

    As you cook each crepe, stack them on a plate with parchment paper in between each layer. This prevents them from sticking together and maintains their delicate texture.

    Top it Off:

    Now comes the fun part – topping your crepes! Whether you prefer sweet or savory, the options are endless. Some delicious suggestions include homemade whipped cream, fresh strawberries, Nutella, sliced bananas, a sprinkle of cinnamon, or a drizzle of syrup.

    Variations

    One of my favorite parts is choosing my toppings and changing them each time. You can choose from a variety of topping choices. Some of my favorites are:

    • Nutella
    • Whipped Cream
    • Syrup of choice
    • Strawberries
    • Bananas (with peanut butter is fantastic)
    • Raspberries
    • and much more!

    • 1 ½ cups milk
    • 4 eggs
    • 2 ½ tablespoons olive oil
    • 3 tablespoons sugar
    • 1 pinch of salt
    • 1 cup flour sifted
    • Oil or butter for greasing the pan

    Instructions
     

    • In a large bowl, combine the eggs, oil, sugar, salt and milk.
    • Add the flour to the bowl and whisk until there are no more lumps.
    • Grease a large fry pan or skillet with butter or oil and pour the crepe batter in and swirl the pan to spread batter evenly.
    • Let the crepe cook on one side for a couple of minutes, but do not overcook or else it will be crunchy, and you don’t want that. Flip the crepe to the other side and let cook for a minute or two.
    • Stack the crepes on a plate with parchment paper in between each crepe so that they don’t stick together.
    • Enjoy with your favorite toppings. My favorites include my homemade whipped cream, strawberries, nutella, bananas, cinnamon and syrup!
