    Banana Bread

    Banana bread has long been a favorite treat for its comforting aroma and deliciously moist texture. But what if we told you there's a secret ingredient that takes banana bread to a whole new level of softness? Brace yourself for the revelation – it's mayonnaise! Yes, you read that right. Mayo is the not-so-secret weapon in creating the softest, most mouthwatering banana bread you've ever tasted.

    I wish you could just smell my kitchen every single time I make this. Don't you wish there was a candle scent that smelled like freshly baked banana bread? I'm sure the scent exists, but nothing will compare to the reality of what it smells like by simply whipping this recipe up for a delicious treat.

    Equipment

    All you need is standard kitchen tools for this delicious banana bread!

    Ingredients

    • Bananas
    • Mayo
    • Egg
    • Brown sugar
    • Granulated sugar
    • Vanilla extract
    • All-purpose flour
    • Baking soda
    • Salt

    Instructions

    Mashed bananas, egg and mayo in a bowl.

    Preheat the oven to 350 degrees F.
    In a bowl, mash together the bananas, mayo and egg.

    Sugar added to the mayo, egg, and banana mixture.

    Add brown sugar, sugar and vanilla and blend just until combined.

    Combine all dry ingredients in a medium sized bowl: flour, baking soda and salt. Mix thoroughly and add to the wet mixture and combine.

    1. Using a bread pan, coat the inside edges with about 1 tablespoon of shortening or use cold butter to coat the edges. Then add 1 tablespoon of flour and coat the inside of the bread pan so that the banana bread will not stick to the pan. Coat it with flour and dump out the excess. If you hold the bread pan upside down over the sink and pat it, the extra flour will come out, but the coating should not.
    2. Pour the banana bread batter into the bread pan and put in the oven.

    Bake for 50 to 60 minutes or until a toothpick comes out clean.

    Variations & Substitutions

    If you don't have Mayo on hand, substitute it with sour cream. They will have the same exact flavor and similar outcomes. Mayo is a good dairy-free option for individuals with dietary restrictions.
