Ingredients
  

  • 3 over ripe bananas
  • ½ cup mayo
  • 1 egg
  • ¼ cup brown sugar
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla
  • 1 ½ cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions
 

  • Preheat the oven to 350 degrees F.
  • In a bowl, mash together the bananas, mayo and egg.
  • Add brown sugar, sugar and vanilla and blend just until combined.
  • Combine all dry ingredients in a medium sized bowl: flour, baking soda and salt. Mix thoroughly and add to the wet mixture and combine.
  • Using a bread pan, coat the inside edges with about 1 tablespoon of shortening or use cold butter to coat the edges. Then add 1 tablespoon of flour and coat the inside of the bread pan so that the banana bread will not stick to the pan. Coat it with flour and dump out the excess. If you hold the bread pan upside down over the sink and pat it, the extra flour will come out, but the coating should not.
  • Pour the banana bread batter into the bread pan and put in the oven.
  • Bake for 50 to 60 minutes or until a toothpick comes out clean.
