Homemade hamburger buns on a sheet pan topped with sesame seeds.

Skip the store-bought buns because these homemade hamburger buns are unbelievably soft, fluffy, and surprisingly easy to make. After making these once, I honestly don't think I'll ever buy hamburger buns from the grocery store again. They're golden on the outside, pillowy on the inside, and sturdy enough to hold even the juiciest burgers without falling apart.

Whether you're firing up the grill for burgers, making pulled pork sandwiches, or using them for breakfast sandwiches, these buns are guaranteed to become a staple in your kitchen.

And, if you’re a fan of these homemade burger buns, don’t miss my other favorite bread recipes!

Why You'll Love These Homemade Hamburger Buns

    • Soft and fluffy bakery-style texture
    • Simple pantry ingredients
    • No preservatives or unnecessary additives
    • Perfect for burgers, sandwiches, or meal prep
    • Freezer-friendly
    • Better than anything you'll find at the store

    Ingredients for Homemade Hamburger Buns

    • 1 cup warm milk (105–110°F)
    • 2¼ teaspoons (1 packet) active dry yeast
    • 2 tablespoons honey
    • 2½–3 cups bread flour
    • 1 teaspoon salt
    • 2 tablespoons unsalted butter, softened
    • 1 large egg

    Egg Wash

    • 1 large egg, beaten

    Optional:

    • Sesame seeds

How to Make Homemade Hamburger Buns

    Step 1: Activate the yeast

In a large mixing bowl, combine the warm milk, active dry yeast, and honey. Let the mixture sit for 5–10 minutes until it becomes foamy.

    Step 2: Mix the dough

Add the egg, softened butter, salt, and 2½ cups of the bread flour. Mix until a shaggy dough forms.

    Step 3: Knead

Mix the dough in your standard mixer for 5 to 7 minutes, adding the remaining flour only if needed. The dough should be soft, smooth, and just slightly tacky.

    Step 4: First rise

Transfer the dough to a lightly greased bowl. Cover and let it rise for 1–1½ hours, or until doubled in size.

    Step 5: Shape the buns

Punch down the dough and divide it into 6 equal pieces. Shape each into a smooth ball.

    Step 6: Second rise

Place the buns on a parchment-lined baking sheet, cover, and let rise for another 30 to 45 minutes until puffy.

    Step 7: Bake

    Preheat your oven to 375°F.

Brush each bun with the beaten egg and sprinkle with sesame seeds if using.

Bake for 15–18 minutes, or until beautifully golden brown.

Cool on a wire rack for at least 15 minutes before slicing.

Tips for the Best Homemade Hamburger Buns

    • Use bread flour for the softest, chewiest texture.
    • Measure flour by weight if possible for the most consistent results.
    • The dough should feel slightly tacky, not dry. Resist the urge to add too much flour.
    • Brushing the buns with a whole beaten egg gives them a beautiful glossy finish.
    • Let them cool before slicing so the crumb finishes setting.

    Storage for Homemade Hamburger Buns

Store the buns in an airtight container at room temperature for up to 3 days.

For longer storage, freeze in a zip-top bag for up to 2 months. Thaw at room temperature or warm in the microwave for 20–30 seconds.

    Frequently Asked Questions

Can I use all-purpose flour instead of bread flour?
Yes! Bread flour creates the fluffiest buns, but all-purpose flour will still give you great results.

Can I make these ahead of time?
Absolutely. These freeze beautifully, making them perfect for meal prep.

    Can I make smaller buns?
Yes! Divide the dough into 8 pieces for smaller burgers or sliders. Just reduce the baking time by a few minutes.

    Final Thoughts

These homemade hamburger buns completely exceeded my expectations. They're soft, fluffy, lightly sweet from the honey, and have that perfect bakery-style texture. Once you taste them fresh from the oven, it's hard to go back to store-bought buns.
