    These Roasted Carrots with Feta Cheese might just win you over like they did me. I’ve always been a die-hard Brussels sprouts girl. Roast them in bacon fat, give them a little char, and I’ll polish off the whole tray before they even hit the dinner table. But these carrots? These carrots are giving Brussels sprouts a serious run for their money.

    Roasted until tender and golden, then tossed with garlicky olive oil, herbs, and finished with crumbled feta—these carrots are the unsung heroes of the dinner plate. It’s the feta that really takes them over the top. My husband even said they taste like a delicious bed of Greek french fries (thanks to the Feta).

    They come together quickly (just 15 minutes of prep!), making them ideal for weeknight dinners, but fancy enough to serve alongside a roast chicken or holiday ham. Bonus: even picky eaters tend to cave when they see the golden edges and melty cheese on top.

    If you’re trying to branch out from your usual veggie routine or want something just as addicting as roasted Brussels sprouts, these carrots might become your new go-to.


    Ingredients for Roasted Carrots with Feta Cheese:

    • 8 large carrots, peeled and chopped lengthwise
    • 5 cloves garlic, minced
    • ¼ cup olive oil
    • ½ teaspoon onion powder
    • 1 teaspoon Italian seasoning
    • ¼ cup feta cheese, crumbled
    • Salt and pepper, to taste

    Instructions for Roasted Carrots with Feta Cheese:

    1. Preheat your oven to 400°F. Line a baking sheet with parchment paper and set aside.
    2. In a large gallon-sized zip-top bag (or bowl), combine the carrots, garlic, olive oil, onion powder, and Italian seasoning. Toss until the carrots are thoroughly coated.
    3. Spread the carrots out evenly on the prepared baking sheet.
    4. Roast in the oven for 30–40 minutes, or until the carrots are tender and slightly caramelized on the edges.
    5. Remove from the oven and immediately sprinkle with crumbled feta, salt, and pepper.
    6. Serve warm—and maybe make a second batch, because they disappear fast.

    • Combine the carrots, minced garlic, olive oil, onion powder, and Italian seasoning in a gallon size baggie and mix until the carrots are coated well.
    • Place on a baking sheet and cook in the oven for 30 to 40 minutes, or until cooked through and soft.
    • Remove from the oven and sprinkle with feta cheese and salt and pepper. Enjoy!
