These roasted carrots are anything but boring—tossed in garlicky olive oil with Italian herbs, then roasted until golden and caramelized. Ingredients
  

  • 8 large carrots peeled and chopped lengthwise
  • 5 cloves garlic minced
  • ¼ cup olive oil
  • ½ teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ¼ cup feta cheese crumbled
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper and set aside.
  • Combine the carrots, minced garlic, olive oil, onion powder, and Italian seasoning in a gallon size baggie and mix until the carrots are coated well.
  • Place on a baking sheet and cook in the oven for 30 to 40 minutes, or until cooked through and soft.
  • Remove from the oven and sprinkle with feta cheese and salt and pepper. Enjoy!
