- 2 tablespoons butter melted
- ¼ cup brown sugar
- 1 tablespoon granulated sugar
- 3 tablespoons pumpkin puree
- 2 tablespoons mayonnaise
- ½ cup all-purpose flour
- ¼ teaspoon baking soda
- Pinch of salt
- ½ teaspoon ground cinnamon
- ¼ cup chocolate chips
Preheat the oven to 350 degrees F. Grease a single loaf bread pan and set aside.
In a medium microwavable safe bowl, melt the butter. Whisk in the brown sugar and granulated sugar.
Add the pumpkin puree and mayonnaise and stir until smooth. If it’s not smooth, add 1 more tablespoon of pumpkin puree.
Incorporate the flour, baking soda, salt, and ground cinnamon into the smooth pumpkin mixture. Whisk until smooth.
Fold in the chocolate chips and pour in the prepared bread pan.
Bake for 25 to 35 minutes, or until a toothpick inserted comes out clean.
