These Sausage Sandwiches combine savory sausage, sweet caramelized onions, and bell peppers with a touch of marinara in a toasted hoagie roll. Topped with melty provolone or mozzarella, these sandwiches are perfect for an easy, flavor-packed meal in just 30 minutes. Great with mild or spicy sausage, they’re ideal for a quick and satisfying dinner.

- 1 lb ground sausage mild or spicy
- 1 large onion thinly sliced
- 1 red bell pepper thinly sliced
- 2-3 cloves garlic minced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- ½ teaspoon crushed red pepper flakes optional
- ¼ cup marinara sauce
- Salt and pepper to taste
- 4 hoagie buns
- Provolone or mozzarella cheese slices optional
Cook the Sausage: Heat 1 tablespoon olive oil in a skillet over medium heat. Cook sausage, breaking it up as it browns (6-8 minutes). Set aside.
Sauté Veggies: In the same pan, add remaining olive oil, onions, bell pepper, and garlic. Cook for 5-7 minutes until soft. Add Italian seasoning, crushed red pepper, salt, and pepper.
Combine: Return sausage to skillet, add marinara, and cook 2-3 minutes to blend flavors.
Assemble Sandwiches: Toast buns, spoon sausage mixture into each, add cheese, and broil 1-2 minutes to melt cheese.
