Cookies:
- 1 box devil’s food cake mix 15.25oz
- 2 eggs
- ¼ cup vegetable oil
Filling:
- ¼ cup butter softened
- 4 ounces cream cheese softened
- 1 ½ teaspoons vanilla extract
- 2 cups powdered sugar
For the Cookies:
Preheat the oven to 350 degrees F, and line a baking sheet with parchment paper and set aside.
Using a standard mixer, combine the dry cake mix, eggs, and oil. The batter will be thick.
Roll the cookie dough into 2 inch sized balls and place them on a cookie sheet.
Bake for 7 to 9 minutes, or until cookies start cracking slightly.
Let the cookies cool on the pan for 5 minutes, then transfer to a cooking rack.
For the Filling:
Beat the cream cheese in a standard mixer. Then add the butter and beat once again, until smooth.
Add the vanilla extract and slowly add in the powdered sugar. Continue to beat together until a smooth frosting forms.
Assembling the Cookies:
Frost the bottom of one of the cooled cookies and place the bottom of another cookie on top of the frosting to form little sandwich cookies. Repeat until all cookies are assembled.
Enjoy the cookies right away, or store them in an airtight container for up to 3 days. Enjoy!
