For the Candied Walnuts:
- ½ cup walnuts chopped
- 2 tablespoons sugar
- 2 tablespoons water
For the Shrimp:
- 1 lb large shrimp peeled and deveined
- ½ cup cornstarch
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 egg beaten
- 1 cup panko breadcrumbs
- ½ cup vegetable oil for frying
For the Honey Walnut Sauce:
- ¼ cup honey
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon rice vinegar
- 1 tablespoon soy sauce
- ½ teaspoon garlic powder
Prepare the Candied Walnuts:
In a small pan over medium heat, combine walnuts, sugar, and water.
Stir until the sugar dissolves and the mixture starts to thicken and caramelize. Once the walnuts are coated, remove from heat and set aside.
Prepare the Shrimp:
In a small bowl, mix cornstarch, salt, and pepper. Dredge the shrimp in the cornstarch mixture, then dip them into the beaten egg, and coat with panko breadcrumbs.
Make the Honey Walnut Sauce:
In a separate bowl, whisk together honey, mayonnaise, lemon juice, rice vinegar, soy sauce, and garlic powder until smooth.
