This Honey Walnut Shrimp recipe is a quick and delicious weeknight dinner, ready in just 30 minutes. It features crispy breaded shrimp, candied walnuts, and a sweet-savory honey walnut sauce.

Ingredients
  

For the Candied Walnuts:

  • ½ cup walnuts chopped
  • 2 tablespoons sugar
  • 2 tablespoons water

For the Shrimp:

  • 1 lb large shrimp peeled and deveined
  • ½ cup cornstarch
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 egg beaten
  • 1 cup panko breadcrumbs
  • ½ cup vegetable oil for frying

For the Honey Walnut Sauce:

  • ¼ cup honey
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon rice vinegar
  • 1 tablespoon soy sauce
  • ½ teaspoon garlic powder

Instructions
 

Prepare the Candied Walnuts:

  • In a small pan over medium heat, combine walnuts, sugar, and water.
  • Stir until the sugar dissolves and the mixture starts to thicken and caramelize. Once the walnuts are coated, remove from heat and set aside.

Prepare the Shrimp:

  • In a small bowl, mix cornstarch, salt, and pepper. Dredge the shrimp in the cornstarch mixture, then dip them into the beaten egg, and coat with panko breadcrumbs.

Fry the Shrimp:

  • Heat vegetable oil in a large skillet over medium-high heat. Fry the shrimp in batches for 2-3 minutes on each side or until golden and crispy. Transfer the cooked shrimp to a paper towel-lined plate to drain.

Make the Honey Walnut Sauce:

  • In a separate bowl, whisk together honey, mayonnaise, lemon juice, rice vinegar, soy sauce, and garlic powder until smooth.

Assemble the Dish:

  • In a large bowl, toss the fried shrimp with the honey walnut sauce until evenly coated.
  • Sprinkle the candied walnuts on top of the shrimp and serve over a bed of rice immediately. Enjoy!
