Ingredients
  

  • 1 tablespoon unsalted butter softened
  • 1 tablespoon brown sugar
  • 1 tablespoon granulated sugar
  • ½ teaspoon vanilla extract
  • 1 tablespoon rolled oats
  • 3 tablespoons all-purpose flour
  • teaspoon baking soda
  • Pinch of salt
  • ½ - 1 teaspoon milk
  • 2 tablespoons mini marshmallows
  • 1 tablespoon chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a small baking sheet with parchment paper.
  • In a small mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Add the vanilla extract and mix until combined.
  • Stir in the rolled oats, flour, baking soda, and salt until just combined.
  • If the dough is crumbly, pour in ½ teaspoon milk and combine. If it’s still crumbly, add more milk until the dough forms together into a ball.
  • Fold in the mini marshmallows (and chocolate chips if using) until evenly distributed.
  • Scoop the dough onto the prepared baking sheet, forming a cookie shape.
  • Bake for 10-14 minutes, or until the edges are lightly golden and the marshmallows are slightly toasted. The center may look a little soft, but it will firm up as it cools.
  • Let cool for a few minutes before enjoying your warm, gooey marshmallow oat cookie!
