- 1 tablespoon unsalted butter softened
- 1 tablespoon brown sugar
- 1 tablespoon granulated sugar
- ½ teaspoon vanilla extract
- 1 tablespoon rolled oats
- 3 tablespoons all-purpose flour
- ⅛ teaspoon baking soda
- Pinch of salt
- ½ - 1 teaspoon milk
- 2 tablespoons mini marshmallows
- 1 tablespoon chocolate chips
Preheat your oven to 350°F (175°C) and line a small baking sheet with parchment paper.
In a small mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
Add the vanilla extract and mix until combined.
Stir in the rolled oats, flour, baking soda, and salt until just combined.
If the dough is crumbly, pour in ½ teaspoon milk and combine. If it’s still crumbly, add more milk until the dough forms together into a ball.
Fold in the mini marshmallows (and chocolate chips if using) until evenly distributed.
Scoop the dough onto the prepared baking sheet, forming a cookie shape.
Bake for 10-14 minutes, or until the edges are lightly golden and the marshmallows are slightly toasted. The center may look a little soft, but it will firm up as it cools.
