- 1 overripe banana
- 2 tablespoons sour cream
- 1 egg yolk
- Splash of vanilla extract
- 2 tablespoons brown sugar
- 2 tablespoons granulated sugar
- ¼ cup all-purpose flour
- ¼ teaspoon baking soda
- Pinch of salt
- 3 to 4 tablespoons mini chocolate chips (milk or semi-sweet) optional
Preheat the oven to 350 degrees F. Coat a small bread pan with butter or shortening and then sprinkle flour around all edges and then set aside.
In a medium bowl, smash the banana. Add the sour cream, egg yolk, and vanilla extract and mix until combined.
Stir in the brown sugar and granulated sugar.
Add the flour, baking soda and salt, and stir until combined.
Fold in the chocolate chips.
Pour the banana bread batter into the prepared bread pan and place in the oven.
Bake for 30 minutes or until a toothpick inserted comes out clean. Let cool for 5 to 10 minutes and then enjoy!
