Ingredients
  

  • ½ cup butter cold and chopped into pieces
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 cup old-fashioned rolled oats
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup chocolate chips of your choice I like semi-sweet + more for on top of cookies

Instructions
 

  • Preheat the oven to 350°F and line a baking sheet with parchment paper and set aside.
  • In a standard mixer (KitchenAid), beat the butter, granulated sugar, and brown sugar for about 1 to 2 minutes.
  • Add the egg and vanilla and mix together.
  • In a separate, medium sized bowl, whisk together the flour, oats, baking soda, cinnamon and salt.
  • Slowly pour into the wet ingredients in the standard mixer and continue beating until well combined. Add the chocolate chips and stir until combined.
  • Using a 2-inch cookie scoop, scoop the dough onto the prepared baking sheet. Place extra chocolate chips on top of each cookie if desired.
  • Bake for 12 to 14 minutes or until the cookies are set.
  • Remove from the oven and cool on the baking sheet for 10 minutes. Transfer to a cooling rack and continue cooling. Enjoy!
