- 2 over ripe bananas
- ½ cup mayonnaise
- 1 egg
- ¼ cup brown sugar
- ¾ cup white sugar
- 1 teaspoon vanilla
- 1 ½ cups flour
- ¼ cup cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup chocolate chips
Preheat the oven to 350 degrees F.
Using a hand mixer, mash together the bananas, mayo and egg.
Add brown sugar, sugar and vanilla and blend just until combined.
Combine all dry ingredients in a medium sized bowl: flour, cocoa powder, baking soda and salt. Mix thoroughly and add to the wet mixture.
Mix together until combined and fold in the chocolate chips. Pour in a greased bread pan and sprinkle a few more chocolate chips on top.
Bake for 50 minutes or until a toothpick comes out clean. Let rest for 10 minutes before slicing. Enjoy!
